Abetti's Enchilados Ingredients: 1 large packe of flour tortillas 2 cans of enchilada sauce 2 cans of green chilis (or fresh!) 1 large container of sour cream 1 bunch of scallions grated chedder cheese (full plate) ground cumin, tbsp + garlic (a lot or a little) salt +pepper cooked chicken or tofu olive oil -- deep fry ortillas, very quick and hot (tortillas bubble) drain on paper towels. In bowl add sour cream, scallions, chicken/tofu, chilis, grated cheese, cumin, salt, pepper In another bowl put enchilada sauce. Dip tortillas into sauce - fill each tortilla with stuffing from above bowl. Once all is in pan top with sauce, scallions, and cheese! cook at 350 for 25 minutes.
