Mom's (AKA. Matushka Galina's) Prosphora Recipe Ingredients: 2 tsp. dried yeast 2 cups warm water pinch of salt pinch of sugar 6 cups King Arthur Flour Utensils: 1 prosphora stamp 1 round cookie cutter about 2.5" 1 round cookie cutter of smaller diamter 1 baking pan about 12"x17"x1 1/3" aluminum foil Dilute yeast, sald and sugar in the water. Slowly adding the flour mix the dough. Knead until dough is smooth. Leave dough for raising for one hour or until doubled in size. When ready roll the dough out to a half inch thickness. Cut the sheet into circles using the larger cookie cutter; usually a pan can hold twenty-four. Place these on the floured pan (do not grease the pan). Knead the dough that was left into a slightly thinner sheet. Using the smaller cookie cutter cut out enough tcircles to cover the larger ones already in the pan. After you have cut them out stamp them with the prosphora stamp. Using a wetted piece of paper towel wet the surfaces of the larger circles in the pan. Paste the stamped tops onto them. With a toothpick make a hole in the center of each prosphora to let air out during baking. Cover the baking pan with a piece of foil and bake immediately at 325-350 degrees for 30-35 minutes. when ready transfer the prosphoras onto a flat surface, cover with a towel , and let cool. brush off the underneat of the prosphora from flour with any brush and store in a plastic bag.
