Dot's Spanacopita 1 pan Mix in bowl: 1 pkg filo dough (log yellow box) keep in fridge night before to thaw 1 pkg fresh spinach: cut stems off, cut in pieces, rinse 3-4xs. 5 eggs, beaten -> mix with spinach 1 medium size cottage cheese -> mix w/spinach+eggs (drain if wet). 3/4 lb. feta cheese -> mix all together well salt to taste (will cook in pan later. 1 lb melted butter, for brushing filo dough (use damp towel over filo dough to keep filo dough from cracking. while working with it.) a. brush botton of pan w/butter. 6 Filo doughs each brushed with button on top. b. layer of spinach filling c. 5 more filo dough layers, each buttered d. spinach layer. e. 5 more filo dough layers, etc. until spniach used up. f. top with 3-4 layers of filo dough. g. cook at 325-350 for one hour. Poke with a fork to release air. Cut when cold.
